25ml fresh lemon juice
20ml Greek thyme honey syrup
1 egg white

Method
Combine tsipouro, lemon juice, honey syrup, and egg white. Dry shake vigorously for 15 seconds. Add ice and shake again. Double strain into a coupe. Garnish with grated lemon zest.
